Tomato Mozzarella Salad, also known as Caprese Salad

Tomato based recipes are not only easy to make but also showcases the fresh flavors of the ingredients.Caprese Salad is a classic and elegant dish that is perfect for summer or whenever you have ripe tomatoes on hand.

Ingredients: Fresh tomatoes, fresh mozzarella cheese, fresh basil leaves, , balsamic glaze (optional), salt and pepper to taste.

Instructions:

Slice the Tomatoes: Wash and slice the tomatoes into 1/4-inch thick slices. If you’re using cherry tomatoes, you can halve them or leave them whole.

Slice the Mozzarella: Slice the fresh mozzarella cheese into similar-sized slices as the tomatoes.

Assemble the Salad: On a serving platter or individual plates, alternate slices of tomato and mozzarella. If you’re using cherry tomatoes, you can arrange them alongside the mozzarella.

Add Basil Leaves: Tuck fresh basil leaves in between the tomato and mozzarella slices. You can leave them whole or tear them into smaller pieces for a rustic look.

Drizzle with Olive Oil: Drizzle extra virgin olive oil over the tomato and mozzarella slices. This adds a wonderful flavor to the salad.

Season with Salt and Pepper: Sprinkle salt and pepper to taste. Keep in mind that the mozzarella may already have some saltiness, so taste before adding too much salt.

Optional: Balsamic Glaze: If you like a balsamic flavor, you can drizzle a balsamic glaze over the salad. It adds a sweet and tangy touch.

Spaghetti Bolognese

Instructions:

Ragù: Heat olive oil in a large pan over medium heat. Add the chopped onion and garlic, sauté until softened. Add the ground beef (or beef and pork mix) and cook until browned, breaking it up with a spoon. Stir in the tomato paste and cook for 1-2 minutes. Then, add the crushed tomatoes, beef or vegetable broth, red wine (if using), oregano, basil, salt, and pepper. Bring the mixture to a simmer. Reduce the heat to low, cover the pan, and let it simmer for at least 30 minutes (longer if possible) to allow the flavors to meld. Stir occasionally.

Cook Spaghetti: While the sauce is simmering, cook the spaghetti according to the package instructions. Drain and set aside.

Finish the Sauce: Taste the Bolognese sauce and adjust the seasoning if needed. If the sauce is too thick, you can add a bit of water or broth to achieve your desired consistency.

Roast Chicken with Potatoes

One classic and delicious dish featuring chicken and potatoes is a simple Roast Chicken with Potatoes.

Ingredients: chicken thighs, medium-sized potatoes, peeled and cut into chunks, 1 onion, 4 cloves garlic, minced

Instructions:

Preheat your oven to 400°F (200°C).

Prepare Chicken and Potatoes: Pat the chicken thighs dry with paper towels. In a large bowl, toss the chicken thighs, potato chunks, sliced onion, and minced garlic with olive oil, dried thyme, dried rosemary, salt, and black pepper until everything is well coated.

Assemble in Baking Dish: Arrange the chicken thighs, potatoes, onion, and garlic in a single layer in a baking dish or roasting pan. If you like, add lemon slices on top for extra flavor.

Roast in the Oven: Place the baking dish in the preheated oven and roast for about 45-50 minutes, or until the chicken is cooked through, and the potatoes are golden and tender. Make sure to turn the potatoes halfway through the cooking time for even browning.
